Pizza dough

Makes four 1 pound loaves

2 3/4 cups lukewarm water
1 1/2 tablespoons granulated yeast
1 1/2 tablespoons salt
1 tablespoon sugar
1/4 cup extra virgin olive oil
6 1/2 cups unbleached all-purpose flour

mix everything but flour, add in flour, combine all, kitchen aid with a dough hook is really the way to go. You can use a 14qt food processor alternatively.

A half batch looks like this

11 oz water
2.25 teaspoon yeast
2.25 teaspoon salt
1.5 teaspoon sugar
2 tablespoon olive oil
3 1/4 cups of flour
